Another super easy, high protein and iron, fast vegan meal! I don't have a lot of time to cook dinner, since most days I am at the studio until past dinner time. But this is a quick and easy spin on a regular spaghetti recipe, but far more nutritious!
Here's my recipe:
1. POW red lentil linguini pasta
2. Victoria avocado oil marina
3. Sliced mushrooms
4. Minced garlic
5. Vegan butter
While boiling the linguini, saute the mushrooms in butter and garlic. Once the mushrooms are cooked, add the jar of marina to warm everything together. Top marina mixture on the linguini and then add slices of fresh avocado.
